Oven Free Energy Bites - YUM!
Recipe -
1 cup dry (gluten free) oats
2/3 cup unsweetened shredded coconut
1/2 cup nut butter (we've used cashew or almond)
1/2 cup ground flaxseed
1/2 cup Enjoy Life! mini chocolate chips
1/3 cup local honey
2 tbsp chia seeds
1 tsp vanilla extract
Mix all ingredients together and place in refrigerator to set for 30 minutes. Roll into balls, about 1.5 inches in size. Store in an airtight container in the refrigerator.
